Göttingen: Zero Waste

While thriving during the covid-19 pandemics, package-free supermarkets have been facing hard times thereafter, and in big cities with high rents we've seen a wave of shop closings. Even the beautiful grocery Wunderbar unverpackt ("Wonderfully devoid of packaging") which opened in May 2018 wasn't able to survive and closed for good in 2023.

To refill dry food supplies from gravity bins pay a visit to the Naturalia grocery at Wöhlerplatz, a traditional crammed organic corner shop which offers a small assortment of dry food (pasta, cereals, nuts, rice and the like) in self-service dispensers. Apart from this eggs, bakery items, fruits, veges and cheese can be taken home in your own jars and bags. In addition the place is also a tea shop – so bring your tea boxes for refill. If you stay in town for a longer period of time consider to collect stamps on the Göttingen Climate Card ("Klima-Karte") here each time you use your own bag or box. When you collect 16 stamps from a number of (not necessarily organic) shops, market boothes and restaurants in town you will be rewarded with a climate-positive goodie bag and earn support for climate projects in town. The shop-keeper seems to run a small farm herself as she asks for apologies in case she'd appear in the shop past 10 am, to help sheep giving birth.

The second organic grocery to collect Climate Card stamps from is the Bioladen an der Burgstraße, a dedicated anti-fascist neighbourhood grocery next to Cafe Inti. A few years ago this cosy full-retailer replaced a branch of an organic bakery based in Klein Lengden with shops both there and in Göttingen, delivering to many organic markets in the greater region. The Sunday-open place has the air of a traditional organic corner shop and makes an extra effort to offer products packaged in returnable glasses, among others wine gums. More liquorice and jellies can be bought by the gram, and together with the cheese and bakery counter (which fills about half of the entire location), the racks with fruit and veges and the dairy products and drinks in deposit glasses and bottles my estimate is that more than half of the goods can be bought without disposable packaging.

The shop also has an innovative approach to keep away wasps from ripe fruits: small trays filled with over-ripe fruit juice on a window sill a little apart from the entrance attract the insects which are occupied there as long as you don't disturb them.

The Gemüseladen in the Western suburb of Geismar, near the church of St. Martin, is not participating in the Klima-Karte scheme. However, this organic greengrocery is offering an abundance of regional produce which you can take home in your own bags.

On the other side of the street you'll find Le Bol, a bio-dynamic organic French-German artisanal sourdough bakery – according to locals making the best bread in town. Needless to say that you can come with your own bag and that the bread keeps fresh much longer than ordinary fare. Given that the baker has to rise early so you can have fresh bread in the morning, opening hours are restricted to the morning ihours except on Thursdays.

If you are on a bike tour or stay in town a little longer consider a visit to the Naturmilchhof Gartetal organic dairy farm. To get their continue from Geismar to the village of Diemarden about four to five kilometres away. Buying fresh milk, oat drink, yogurt, kefir or cheeses from the farm's own dairy is unfortunately somewhat inconvenient as you must register at the farm's web shop to use their self-service farmshop guarded by surveillance cameras. Then you would use the computer inside the shop to register your purchase, and your debt will be detracted from your bank account. I haven't checked whether this works with any European bank account. All liquid and semi-liquid products come in returnable plastic bottles and jars with a deposit. The shop is closed on Sundays and public holidays.

Household items supporting a package-free lifestyle can be found at the factory outlet of the eco postal order shop Waschbär near Geismartor. Here you may also refill cleaning agents, liquid soap and detergents to get a stamp on your Climate Card. Unfortunately the shop is going to close for good by the end of October, 2024.

For loose weight organic tea you may also pay a visit to Tee Gschwendner. Just like other franchises of this brand they sell more conventional than organic teas, but the shop assistants will show the right sorts when you ask for "bee-o" (bio) teas and place your tea box on the till.

Dresden: Organic supermarkets and groceries

Organic wholesale in the capital of Saxony (which is governed by a red-red-green coalition) used to be dominated by the local economy, but since the oldest organic supermarket in town, Biosphäre, became part of the nation-wide Denn's chain in 2018, the picture has been resembling the one in other German metropolises: The market is devided between two local actors, a regional one and two of the nation-wide operating grocery chains, with a hand-full of smaller corner shops filling niches.

The largest density of organic supermarkets can naturally be found in the vibrant Wilhelminian style quarter of Neustadt north of the river Elbe with its – gentrification aside – still predominantly left-wing population of artists, students, activists, tourists, hipsters and bourgeois green-party voters.

Neustadt

It hasn't been always this way, but walking the old streets of Innere Neustadt with open eyes will present you with an abundance of shops and eateries boosting of vegetarian and vegan products. Many of them use organic produce, but won't advertise it – partially because they blend with conventional products, and use of organic ingredients will vary, partially in fear of being prejudged as expensive. Fortunately it is nowadays easier to find an organic supermarket in this neighbourhood than a conventional one, so if you're tired of asking just walk to the next crossroad, and there you are.

The former Biosphäre markets are located here: the older one on Königsbrücker Landstraße opposite Schauburg theatre, and an even larger one in Alaunstraße a few metres from Albertplatz which replaced a conventional supermarket. Both have a self-service area where you can have coffee, cakes, pastry, sandwiches at any time of the day, and soups for lunch. Students are entitled a 10 percent discount on Wednesdays. Recently the shop in Alaunstraße also took a small effort to support package-free shopping.

Berlin-based organic supermarket chain Bio Company has a branch a little south along the tramway tracks on Königsbrücker Landstraße. Just like the Denn's branches it closes at liberal 9 pm. The Bio Company stores recently introduced fill-yourself stations with dry food and sweets. This shop offers more refill options that the one near Blaues Wunder bridge.

If you despair in face of the piles of plastics and paper wrappings you've been collecting while doing your regular shopping, re-use your glasses, containers and bags and refill them at Lose, a cosy zero-waste corner store in Böhmische Straße.

Altstadt

The Denn's Biomarkt chain not only took over the two former Biosphäre markets in the Neustadt but also opened a new supermarket within the Altmarktgalerie shopping mall.

Near Bahnhof Mitte train station you'll find the main branch of VG Biomarkt, an organic co-operative which not only supports your zero-waste efforts but also sports its own organic fashion store.

Striesen, Blasewitz, Loschwitz, Johannstadt

The neighbourhoods along the river shore on the east side of town sport several branches of the zero-waste friendly VG Biomarkt food co-operative.

South of the Blaues Wunder bridge, local butcher's chain Vorwerk Podemus has one of its pleasant wholesale supermarkets. First address for shortly travelled organic meat of animals which had a decent life. They also have branches in the neighbourhoods of Gruna, Neustadt, Alttolkewitz as well as a farmshop. While the Podemus shops do not offer food in gravity bins, they have been increasing their product range with jogurt, honey and jams in 250 ml deposit glasses lately. Make sure to return them in any organic supermarket.

Another option in the neighbourhood of Blasewitz is the second Bio Company branch in town. Just like in the Neustadt branch the bakery disk caters for the early bird from 7:30 am.

The only branch of a nation-wide operating organic grocery chain so far is Alnatura on tram hub Straßburger Platz which many locals still refer to by its old name from GDR times, "Fucikplatz".

Bühlau, Weißer Hirsch

To find fully organic groceries on top of the hillside North of the Blaues Wunder bridge, in the elegant residential area of Weißer Hirsch and adjacent Bühlau interestingly proves to be more difficult. What I found instead was the shop of a small-scale vegan manufacturer, Vegannett (a pun made of the words "vegan" and "nice", while the second part of the name also refers to the name of the owner-founder, Annett). On the premises of a former partially organic butcher's shop she prepares vegetable spreads which you can buy in many of the aforementioned supermarkets. But if you happen to be there on a Wednesday afternoon, pay a visit, taste and shop. In addition to the spreads you can also buy local honey. And the best: Since 2022 the spreads have been coming in deposit glasses!

Klotzsche

If you fancy a stroll in the woods of Dresdner Heide or are on the way from or to the airport make sure to have sufficient time to visit the beautifully restored historical train station Klotzsche with its Vorwerk Podemus supermarket and the organic station restaurant, both catering for the early bird.

Salzburg: Zero Waste

While buying organic requires only a little extra effort in Salzburg, minimising waste is an entirely different issue. If you wish to carry home your purchases in your own re-usable containers you depend on the cooperation of the shop, which (even in organic supermarkets) can be surprisingly little. The covid-19 pandemics marked the beginning as well as the end of the (to my knowledge) only dedicated organic pay-by-weight grocery, GenussProGramm (a pun which can be translated as both, "pleasure by the gram" or "pleasure program") in the neighbourhood of Andräviertel.

So what's left? As in other cities farmers' markets are a good bet: The Medousa market booth at the Grünmarkt opposite Fabi's Frozen Bio Yogurt within Mozart's birthplace offers to fill Italian-style antipasti and other mediterranean and vegetarian delicatessen into your jars, provided you ask for it. Although the market at Grünmarkt is held daily, there are no organic boothes on Mondays and Thursdays; the Medousa booth is here on Saturdays only. On Thursday mornings you can find it at the Schrannenmarkt opposite Mirabell castle.

At the Schrannenmarkt you'll also find the market booth of the Ökoprodukte Feldinger organic farm which in the past used to run a fully organic supermarket in town. The booth is located next to Ändra church.

Offsite tourist tracks but on your way to Hellbrunn castle or zoo you'll find what until spring 2023 was Salzburg's only branch of the organic supermarket chain Basic. Prior to its insolvency this organic retailer had a focus on reducing one-way packaging. While the German Basic supermarkets were bought by the conventional tegut chain, the two Austrian branches (the second one is located in Vienna) will continue as fully organic supermarkets of the Dennree chain.

However, I do not know whether gravity bins with dry food survived here as Denn's has never had a focus on refill. As in most organic supermarkets fruits and veges usually are not pre-packaged, and serviced desks for bakery and dairy products allow you to take home products in your own boxes. There's also a slowly increasing range of products in returnable jars and bottles, but unfortunately these are usually more expensive than their counterparts in one-way packaging.

To refill milk around the clock head for the milk vending machine at the Erentrudishof organic farm in Morzg, a pleasant bike ride from the city. There's also a farmshop, of course with more restricted opening hours, where you also can buy eggs, spelt, wheat and rye produced by the farm.

Artisanal bakeries

When buying bread, rolls, cake or snacks from organic bakeries you should by now no longer meet strange looks when presenting your bag or container. But organic bakeries in town seem to be afraid of advertising themselves as "bio", so it can be difficult to spot them.

The most stylish one of them is the Salzburg branch of Joseph Brot vom Pheinsten with its open baker's workshop a few steps away from the Mönchsberg elevator. Apart from deliciously smelling bread, rolls, cakes and snacks there's a small selection of dairy products, jams and preserves. You can also order organic (coffee) drinks and sit down on a table to have a snack or enjoy their patisserie. The bakery keeps open on Sunday mornings and public holidays.

Elisabethen-based artisanal bakery Pföß has a shop next to the Sternbräu area in the old town. Unfortunately only the bread is promised to be organic, the white rolls tasted bland as if they were made of conventional flour. On the other hand the Krapfen doughnuts were a real delight, crisp and still a little warm, filled with fruity apricot purree instead of oversweet jam. If you come here for a snack stay away from the conventional softdrinks, and you may wish to ask whether the sandwiches are made with organic toppings.

If you want to be sure to get 100 percent organic bakery products, visit the Grünmarkt at Universitätsplatz: Three days a week you'll find the booth of Bio-Bäckerei Itzinger on its Eastern side, near the Ritzerbogen hallway. The bakery also offers vegan bread and rolls and has a focus on wholemeal products. On Thursdays you can find it at the Schranne Biomarkt.

Plastic-free lifestyle

Zero waste starts with the food, but does not end there: In order to reduce the amount of plastics ending up as microplastic in our environment and finally in ourselves it's crucial to reduce the use of the (undoubtedly useful) polymers in general: Don't throw them all away at once (as the biggest part of the carbon footprint of goods is in their production), but replace your plastic household items or clothes with plastic-free alternatives as soon as they are about to degrade.

In Salzburg there's a store to help you with that: Damn Plastic in the Europapark mall in Taxham offers almost the entire range of plastic-free (or recycled) non-food, for inspiration or replacement. Unfortunately their original shop in the inner city does no longer exist.

Bremen: Organic Ice-cream

If you fancy a freshly made organic ice-cream in Bremen be prepared to work out – hope for good weather, rent a bicycle and do as many locals do: Set out on a 15 kilometers ride, first in direction University, and then on the dyke safeguarding the land against the river Wümme to a dairy farm run by friendly family Kaemena in Niederblockland.

On the embankment cars are allowed with a special permit only, but an astonishing number of locals come here by bicycle, foot or skating to enjoy an organic ice-cream (the scoop goes for 2.20 EUR in 2023), coffee or cold organic drink and enjoy the farm and the countryside. The ice-cream is made right here on the farm: from the milking station to the ice-cream factory it's only about 25 metres, and another few metres to the cafe. Don't miss the poppy seed ice-cream and the varieties based on buttermilk and yogurt. And please, avoid ordering your ice-cream in a one-way paper cup: for a little surplus you can have a vegan wafer cup (free for two or more scoops), compostable if you do not eat it. You may also take a free wafer ice-spoon instead of a plastics one.

Opening hours on pleasant summer days may be a little longer than announced, and the ice-cream parlour is closed in winter.

The farm itself is driven according to the seven Bioland principles, with about 80 cows (which all have individual names) and calves who are fed by and kept together with their mothers until they eat grass and hay (which is at an age of about five weeks). The cattle race comes without horns naturally, so no harm is done to the animals in order to remove them. The farm also keeps a few other animals like geese, two pigs, a couple of goats, pheasants and chicken (both hens and cocks) and gives home to a lot of wildlife like a sparrow colony and swallows.

There's a nice playground for children, and if you want to stay longer (minimum one week) the family rents out several pleasant holiday apartments (but make sure to book well in advance for holiday seasons).

In May 2022 the Kaemenas opened a new Sunday-open ice-cream parlour cum farm shop in the Neustadt. If you don't want to have your ice-cream on the go, there's little seating, a few benches outdoor, and some high chairs inside, to have a coffee, milk-shake or a "cold" chocolate with ice-cream. The cafe participates in the Recup scheme, so make sure to have your hot or cold drink to take away in a returnable cup.

Unlike the cafe at the farm this place will keep open around the year and provide you not only with ice-cream but also with cheese, jogurt, and milk.

Starting with the covid-19 summers a stylish mobile coffee bar of the Coffee Bike franchise has been popping up in the very city centre on Ansgarikirchhof during the warm season. In addition to the fully organic coffee drinks there is a separate mobile booth with Kaemena's ice-cream. Unfortunately they do not offer neither eatable ice-cream wafers nor earthenware cups for the coffee, so you are forced to enjoy it in non-compostable one-way cups unless you bring your own.

If you are in the vicinity of the university's refectory around lunch time on a weekday visit the organic ice-cream booth inside the Uni-Mensa: Opposite the refectory's check-out you get the scoop of organic ice-cream produced in Hamburg at an unbeatable price (1.30 EUR in 2023). They offer three dairy and even more vegan flavours (my favourite: the vegan salted peanut butter). You may pay cash or by the Studierendenwerk prepaid card.

Bremen: Sunday and late-night addresses for organic stuff

Organic and eco-conscious trade in the city of Bremen is still dominated by smaller shops and supermarkets closing between 6 and 7 pm, and between noon and 2 pm on Saturdays. Although outlets of the Alnatura and Aleco organic supermarket chains keep open until 8 pm, you might end up quite frustrated if your schedule doesn't allow for day-time-on-weekdays shopping.

Big conventional supermarkets and discounter shops in Bremen like Rewe and Penny often keep open until 10 pm Monday to Saturday. The latter puts green labels on the shelves in front of organic products which help to find organically certified food.

There's a cluster of Sunday-open shops inside Hauptbahnhof, the main train station, and these usually keep open on public holidays, too. So unless you're longing for fresh veges or frozen food, you should be safe, even on Sundays and in the evening.

A small selection of fresh fruit, dairy products and non-dairy alternatives, drinks, dry food, sweets, natural cosmetics and a full-fledged range of bread, rolls, and pastries (both, sweet and savoury) can be found at the Reformhaus Bacher health-food shop (before 2021 its name was "Betterlife"). All fresh bakery products are organic, but you have to check for organic labels on pre-packaged items as about half the products on offer aren't certified as organic food or natural cosmetics.

With their own brands "Alterra" (certified natural cosmetics), "Eco-Freude" (sustainable household detergents) and "Alverde" (food) Rossmann drugstores are an alternative for the small purse. The branch inside Hauptbahnhof keeps open 16 hours a weekday, and 14 on weekends and bank holidays. It's easy to find: Climb the stairs to the right after entering the central station from the Bahnhofsplatz tram and bus hub.

What's unique for a German city is that there's a Sunday-open package-free convenience store: Selfair at the Steintor.

Vending machines

For pre-packaged organic sausage and meat products, predominantly in the jar head for the Lebensmittel-Punkt inside the Markthalle 8 food court at Domshof. When you enter the building there's a 24x7 open vending machine at the right hand side where you can buy a lot of regional sausage specialities as well as ready-made meat stock. You can also put orders of fresh meat at their webshop and collect your order on Fridays and Saturdays between 11 am and 6 pm from the dish counter of the food court. The name "Lebensmittel-Punkt" is a play on words – the composed noun can mean both, "place to buy food" and "centre of vital interest".

At the organic farm of the Kaemena family in Blockland you'll find 24x7 open vending machines for local organic products. Here you can tap raw or pasteurized milk into your own bottle, the liter for 1.20 EUR. If you did not bring one you can buy a returnable milk bottle for the price of 2 EUR the Regiomat vending machine which also stocks jam, drinking yogurt and cheese from the farm as well as cheese, eggs, honey and sausage in the jar by organic farms in the vicinity. In addition there's a little freezer with iced lollies at 2.50 EUR the piece for which you pay into the honesty box next to it – all worth the bicycle tour on the dyke as cars need a special permission to come here. Don't forget to bring cash.

Both, the jam and jogurt glasses can be returned here for re-use (there's a separate "waste-bin" next to the vending machine), but to get back the deposit for the milk bottles you have to turn to the farm cafe during its opening hours.

In 2022 a second milk vending machine and a Regiomat found their way into the city: In front of the Friedenskirche in the Viertel you can however tap pasteurized milk only, no raw milk. As the milk has to come here by car the prize for the liter is higher than the one next to the milking parlour.

And last but not least: The Kaemena's newly (in 2022) established ice-cream cum farm shop in the Neustadt part of town keeps open on Sundays and public holidays and sells jogurt, cheese and naturally milk.
